Here are a few of my recipes, taken from my forthcoming book titled;

'Eating with Plant Foods Cooked & Raw'.

Raw Watercress Soup (serves 2)

  • 85g Watercress
  • 1 Large Avocado (or 2 small)
  • Juice of 1/2 Lemon
  • 1 tbsp Chopped Onion
  • 2 Celery Stalks
  • 13 Fl oz Water

Blend all the ingredients in a blender until smooth.

Scrambled No Egg (serves 2)

  • 250g Tofu
  • 2 tbsp Soya Yoghurt
  • 1 tsp Soya yoghurt
  • 1 tsp Turmeric
  • 2 Garlic Cloves Chopped
  • 1 tsp Tomato Puree

Break & mash the tofu with a fork, then add the remaining ingredients and heat in a saucepan without oil. Serve with organic wholemeal toast or as part of a traditional English breakfast, with tomatos, vegan sausages, baked beans & organic wholemeal toast.
